Every so often at the Disney commissary they offer this crazy fusion nacho thing which is kind of expensive and too large a serving for one person but is OMG DELICIOUS. I tried replicating it and have made a fairly close cut-price knock off:

3 tbsp soy sauce
2 tbsp seasoned rice vinegar
1 tbsp grated fresh ginger
1 large tomato, seeded and diced
1 avocado, diced
OPTIONAL:
sesame seeds
sprouts (daikon, bean, or alfalfa)
seaweed salad
Japanese mayo
small cubes of raw or seared tuna (the commissary version has this, and all of the above)
ponzu sauce or lemon juice
miso
wasabi


Best served with wonton chips, though any rice-based chip is good, and unsalted tortilla chips will do in a pinch. If you use large sprouts you may want to cut them shorter to ease in dipping. Some of the optional ingredients should only be mixed in if you're planning to consume all the dip in one day – the sprouts will go soggy, the seaweed will overpower the flavour, and the raw fish ... well, it's raw fish.

Ooh, avacado+wasabi... the first time I had wasabi I mistook it for guacamole, and applied it to my food as such. No one in the room stopped me, instead they all just sat and watched.

Could do this dip minus the tuna, definitely.

Somehow, I can't stand raw fish. I think I inherited my mom's OCD, to be honest. She has this thing about not eating raw meat/fish/eggs/whatever. She also has this thing about not using the same dish towel to dry your hands and dry the dishes, which I did not inherit, because it's a little silly.

I never liked fish, and thought sushi was disgusting on principle because not only was it fish but it was raw ... until I forced myself to try some, and then I learned I only disliked cooked fish.

As much as you like? I usually shake the sesame seed bottle over the mix until it 'looks right,' throw in a handful of sprouts (and usually add more as the dip gets finished because they tend to float to the surface), um .... maybe a couple hearty chopstick servings of seaweed salad, depending how much you like it, a generous squiggle of mayo (it comes in those squeezy bottles, right?), 1/2 cup tuna cubes, a shake or two of ponzu/lemon, a teaspoon of miso, and a dab of wasabi.

Scientific accuracy to the last!
